Purpose and Scope
Responsible for cleaning restaurant/bar/kitchen premises, using portable cleaning equipment. . To perform cleaning duties as assigned by the Restaurant/Club/Bar Manager or Head/Sous Chef. To comply with company and cleaning policies and procedures, ensuring that all services provided achieve the established standards.
Specific Duties and Responsibilities
- Operate vacuum cleaners to clean floors, work areas and machinery
- Clean, dust and polish furniture and fittings
- Sweep, mop, scrub and polish floors, shampoo carpets and rugs, and strip wax and polish from floors
- Clean walls and windows
- Clean and disinfect laundry, kitchen, toilet and bathroom fixtures and floors
- Empty and clean ashtrays and waste containers
- Clean areas surrounding buildings, such as paths and entrances
- Clean bar service area and polish glasses.
- Observe workplace hygiene, occupational health and safety, and security procedures
· Highest standards of hygiene, cleanliness and sanitation of kitchen and equipment is maintained at all times
· Operational policies and procedures are adhered to
· Safe working conditions for staff are maintained at all times
· The department functions within all relevant statutory legislation
· Breakages to be reported, and recorded to ensure breakages are controlled and tracked
· Correct and safe equipment storage
· Food Production areas, equipment, utensils and fittings are cleaned according to departmental policies and procedures and standards
· Damaged items are removed for repair and replaced timeously
· Highest hygiene standards are adhered to, resulting in favorable health and safety audits
· Waste is disposed of according to procedures – care taken to prevent contamination and spread of germs
· Adhere to eco- friendly waste management systems
Willingness to help in other areas (flexibility)
Critical Competencies, Skills and Abilities
· Be able to communicate and understand the predominant language(s).
· Be able to work in a standing position for long periods of time (up to 5 hrs)
· Be able to reach, bend, stoop, and frequently lift up to 50 lbs.
Must have the stamina to work 50 to 60 hours per week
